

Lunch can be a bit of a pain. Sometimes it's just plain hard to decide what to make.

Today we're going to show you how to make quinoa lettuce boats with feta cheese, mint and Roasted Garlic Deli sauce (and with 85% less fat than mayo, you're getting big flavour with zero guilt).
Here's how's it's made...
Place one cup of quinoa with two cups of boiling water in a saucepan and cover with a lid
Cut lettuce heads through the centre to create boats, then drain the quinoa
Slice up the mint into small pieces
Crumble feta cheese through the cooked quinoa, then place the mixture on top of the lettuce boats
Top with mint, before drizzling with with Roasted Garlic Deli sauce
