There's nothing like a gorgeously chilly scoop of gelato in the sun to cool you down when on a sun holiday. And there's nothing like dreaming of that gelato in the sun to help us through the cold and dark days. Since Aer Lingus has landed with their fabulous January sale (with discounted flights to some amazing destinations in Europe and North America over on their website), we are already dreaming of gallivanting in the sun and devouring all the gelato that we possibly can. We've been inspired and have come up with a list of some of the most stunningly sunny destinations across Europe to enjoy a cool and creamy scoop (or two) of gelato.

Sardinia

Sardinia is one of Aer Lingus' brand new routes, and we're pretty chuffed about that. The Italian island has everything from gorgeous beaches, breathtaking hiking trails, delicious food, delightful gelato and, of course, lots and lots of sun. Plus, the island is one seriously historically and culturally rich place, with loads to see and explore while you're there.

Where to get the best gelato: Intenso Gelateria

And there is plenty to do when in the vicinity of this spot.

There are a few fun ways to make your way around the city, perhaps on a tuk-tuk or even a segway. The marina also makes for some beautiful strollin', while there are plenty of awe-inspiring historical sites such as Bastione San Remy and Torre dell’Elefante.

Rome

Naturally, there is going to be more than one Italian entry on this list. And where better to enjoy the Italian sun and some gelato than in one of the country's historical and cultural centres, Rome? Rome is absolutely bursting with things to do and see (and eat!), and it's a wonderful spot to soak up the sun when travelling abroad this year. If you haven't been, what are you playing at? Where to get the best gelato: Venchi Cioccolato e Gelato, Roma Pantheon

For artisan gelato and a selection of fine chocolates, Venchi Cioccolato e Gelato is the place to go. You'll have the option to dine in or take your tasty tub away to enjoy while you frolic around in the Roman sun. The shop is only a short walk from the Pantheon, St Maria Sopra Minerva Basilica and the iconic Trevi Fountain.

Barcelona

Barcelona is an interesting (but class) sunny holiday destination for 2020 because you get the best of both worlds. Enjoy days lazing around on the beach, then explore and discover all of the gems this city has to offer while leaving memories of colder weather far behind you. With fabulous features such as the Sagrada Familia, Gaudi's Casa Batlló and Park Guell, you'll be kept super busy. In between all of that, soak up the sun on Barcelona Beach. With a tonne of restaurants, cafés and bars along the coast, it's one exciting spot.

Located a mere six-minute stroll from Barcelona's main shopping street, La Rambla, it's in the ideal central location, perched right in between the beach and the bustling urban centre of Barcelona. With unexpected flavours such as Chai Tea, Spicy Chocolate and Analcoolic Mojito, you could return here again and again and have a different experience every time. Plus, the presentation is nothing short of STELLAR (Instagram gold, really).

Because of its central location, it's the ideal gelato pit-stop during your day out in Barcelona.

It's quite near to many hop-on-hop-off bus stops both near La Rambla and along the coast. And you'll be pretty stoked when you learn about the number of things there are to do on this beach. Expect banana boats, paragliding and even speed boats.

Madrid

Madrid is hands-down one of the most exciting cities not only in Spain but in Europe. Much like Barcelona, it can be a wonderful way to soak up the sun while experiencing all of the excitement that comes with a European city break. Expect extravagant boulevards, beautiful parks and more gorgeous architecture than you can shake a stick at.

Where to head for the best gelato: Zúccaru

There's no better place to stop and indulge in some of the city's best gelato. There are plenty of tourist activities like bus tours, walking tours and even food trails. Plus, you can't not visit attractions such as the Prado Museum and the Royal Palace. Some amazing spots in Madrid to enjoy the sunshine are El Retiro Park and El Capricho Park. I bet those January blues were lifted as you read that.
