Sweet Vegetarian Pasta With Sweet Potato, Red Onion And Spinach

I'm as guilty as anybody of making sure there is some sort of meat in my meals at all times so I wanted to change it up and give everybody a veggie option. Far from missing out I actually enjoyed this way more than a ton of meat packed dishes. Eats nice and clean, cooks in no time and you can throw in a couple of extra veggies to the basic recipe if you have them throwing around. Give it a whirl. Savage...

Instructions

Step 1

You can probably tell that the ingredients are a random collection of stuff I had laying around the fridge. No point pretending otherwise as that is the dilemma we all face every day when cooking.

Step 2

Chop up the garlic and the red onions, nice and small. Leave the seeds in the chilli to give it a nice extra kick.

Step 3

Peel the sweet potato and chop it up into even sized pieces. Make sure they're all evenly cut so they all cook at the same speed.

Step 4

Lash on the biggest frying pan you have. Put in a big dollop of olive oil and fuck in the garlic and chilli. You want to do this slowly on a low control heat.

Step 5

Throw the sweet potato into the pan. Turn the heat up a little but nothing over a medium heat.

Step 6

Peel and slice up the red onion. Cut the broccoli into tiny little florets (that is just little pieces in plain English for me and you).

Step 7

Fuck the pasta into the boiling water and give it a stir, following the instructions on the packet.

Step 8

It is important to keep the temperature controlled and the sweet potatoes moving at all times. They'll cook in about less than 10 minutes but keep the heat low.

Step 9

When you sense the potatoes are getting soft, fuck in the red onions and keep them moving too.

Step 10

While that is cooking, grate a good handful of parmesan.

Step 11

Throw the broccoli into the pasta water. It won't take any more than 30 seconds to cook.

Step 12

Strain the pasta and broccoli and lash that into the sweet potatoes

Step 13

Fuck in the spinach. Season it up with a good sprinkle of salt and pepper.

Step 14

Lash in the parmesan and stir the whole thing up in the one pan making sure everything is well tossed so as all the flavours are mixed in together.

Step 15

Serve it up immediately with a little sprinkle of the spare parmesan over the top. Absolutely delicious.

The great thing about this dish is that you can lash it together in advance and heat it up as needed which makes it perfect for popping it in a lunch box for a few days. Who said veggie food was boring? Ditch the meat and give this recipe a go, top notch!
