Spicy Seared Tuna Burger With Mango Salsa

Instructions

Step 1

The key is to get some really fresh tuna. Get it in a fishmongers or one of the high end supermarkets. Be willing to pay a little extra because the fresher it is the better.

Step 2

Peel the skin off the mango. Slice the flesh away from the stone. There is no exact science to this and it can be a pain in the hole to do but you'll get there in the end.

Step 3

Chop the shit out of the mango into little even sized pieces

Step 4

Chop up the chilli and the coriander, if you want an extra kick to it leave the seeds in.

Step 5

Throw the whole lot of it into a bowl and lash in a good bit of harissa sauce to bind it all together.

Step 6

Peel away the outer leaves from the salad.

Step 7

Slice it up into thin strips. The sadicchio adds a load of color to the final dish and has a unique flavour.

Step 8

Lash a bit of salt and pepper onto the fish with a little oil.

Step 9

At this stage you want to have everything ready because the fish will cook in no time. Toast the buns as well.

Step 10

Lash a bit of sauce onto the bun.

Step 11

Throw the salad and mango in.

Step 12

The key with cooking the tuna is an unbelievably hot pan. Leave it on to get heat for a good 2 minutes. All we want to do is sear the tuna not actually cook it through.

Step 13

This process will literally take about 20 seconds on each side. No longer, there's nothing worse than dry overcooked tuna.

Step 14

Whip it out of the pan immediately and lash it into the bun and get it to the table quickly.

Step 15

Pop the lid on top and a drizzle more sauce and there you have it! Unbelievably fucking delicious as they say in the business.
