We all need dishes that we can lash together when we get home in the evening without having to think twice.
This is a really tasty meal, and it's perfect to reheat for lunch the next day. You can play around with the ingredients as well, subbing in different veggies or you can even swapping the prawns for a bit of meat if you like.
The ingredients are super simple and can be changed up as needed. Cooked prawns would work just as well as the raw ones.
Chop the chili in half, leave the seeds in if you prefer spicy food.
Chop the shit out of them so that they are as thin as possible.
Grab a big generous lump of ginger and use a peeler to take the skin off the outside.
Grate it finely.
These are the main flavours of the dish, put them aside for the time being.
Chop all the nice flesh away from the peppers.
Slice them up nice and thin.
Get one of the biggest frying pans or woks you have, it's better to cook it all in one pan so there's less washing up.
When the oil heats up, lash in the chili and the garlic.
Cook them for a couple of minutes before lashing in the prawns, but make sure to strain off any liquid.
Keep them moving around in full heat.
Lash in the peppers when the prawns start to turn pink.
Grab your mangetouts and place them on a chopping board. Try to cut them at an angle, it makes them look more impressive.
Once the peppers begin to soften after about 2 minutes, fuck in the mangetouts.
Cut your limes in to little quarters.
Lash the limes in.
You can lash in the noodles now and start stirring them around, they just need to be warmed up.
Fuck in a good glug of soy sauce.
Mix the whole thing together and stir the sauce in evenly, serve it up and there you have it!
Boom! This really couldn't be any easier to cook and all the ingredients are cheap and easy to find. Make it tonight for dinner!
