If like me you can sometimes be a lazy lout when you come home from work and just want something quick and tasty to eat, then look no further than this piss-easy pasta!
Not only can this be whipped up from start to finish in 10 minutes, it’s also relatively healthy. I used some leftover cooked ham in this but you could easily grill up a few rashers and use them instead.
(Serves 2)
Throw the pasta in a pot of boiling salted water, adding a little oil to the water means it won't stick together. About 1 cup of dried pasta is enough per person.

Finely chop your garlic, tomatoes and peppers.

Throw all the chopped veggies into a frying pan on a medium-high heat with a little oil and stir around for around 5 minutes until totally softened. If the pan starts to dry up just add in little cooking water from the pasta.

Stir in your pasta and cooked ham, season generously with salt and pepper. You can use a little more of the cooking water from the pasta (or some olive oil) to loosen it out if you need to.

Serve with a good lash of grated Parmesan cheese and some chopped or torn basil leaves.

Eat immediately!
