Here's a brilliant snack to throw together really quickly this evening.
Containing only seven ingredients, this recipe couldn't be any easier. While it might seem like breakfast fare, it makes for a great snack at any time of day.
Say hello to these cheesy eggs…
Everything you need apart from the toast, but I’m sure you know what that looks like.

Throw the eggs, a spoon of pesto, half a ball of mozzarella, splash of milk, knob of butter, salt and pepper into a pot.

Lash the eggs onto an even to low heat and keep stirring them. Use a spatula to get that gorgeous texture, rather than a whisk.

Toast and butter your bread. Make sure to splash out on something rustic and decent. Don't be a cheapskate.

Take the eggs off the heat when they're still a little runny. Nothing worse than eggs that are like sawdust.

Don’t freak out that it’s runnier than your usual scrambled eggs, the cheese and pesto make it a little oozier but I promise it's epic.

So it doesn’t really get much easier than that, does it? 10 minutes for a big tasty dollop of eggs with a difference. Now go give it a lash!
