Everyone needs some easy, delicious and healthy recipes in their arsenal that can be whipped together in mere minutes when the munchies come. I love this salad and you see lots of variations of this in salad bars and deli's all around Dublin. It couldn't be easier to make and is gorgeous on its own, but also makes a perfect side salad to a piece of meat or a summer BBQ.
This took me about 5 minutes to make and I was taking my time, so see how quick you can throw it together!
Five main ingredients. Easy.
Slice up the beetroot.

Slice up the beetroot.

Slice up the goats cheese.

And then tear it into bite sized chunks.

Rougly chop up the walnuts. (Putting the weight of your hand on the top half of the knife makes them less likely to ricochet off the walls).

Throw them into a bowl.

Rinse the rocket, then pat off the excess water.

Throw into the bowl with the cheese, beetroot & walnuts.

Add in a little bit of oil, about 2 tbsps worth.

Roughly toss is all together with your hands.

Crack a little black pepper and salt over the top.

Arrange into servings bowls.

Serve straight away. This will keep in the fridge for a day or two also.

That really couldn't be easier and really just involved chopping and throwing things together in a bowl. There's no excuse not to eat healthily with gems that are this easy and delicious!
