Sometimes eating a salad isn't always the most appealing option, but thankfully this is one of those really satisfying and filling salads that feels like a treat. I think most things are improved with cheese and this salad certainly is. The beans make it really filling and the bacon and feta cheese give it a big smack of flavour. This is a really easy recipe that can be banged together in no time.
All your ingredients.

Fry the pancetta in a little oil on a high heat for a minute or two, just until they're golden.

Drain the beans and rinse them well. The tinned beans are almost always cooked first so no need to boil them. Place the drained beans in a bowl.

Rinse your rocket and let it drain in a colander.

Crumble almost half a packet of feta cheese into the beans.

Top with the fried bacon.

Sprinkle in the chopped chilli and the zest of a lemon. Make sure you deseed the chillies first unless you want it really hot.

Add in the drained rocket and toss it all together with your hands.

Sprinkle a little more feta over the top and drizzle with a little olive oil.

Serve!

This makes a perfect, quick dinner after work and a great side side if you're making a big meal for friends.
