Cooking can be a bit of a pain in the arse when you get home during the week after work.
Cooking healthy food is even harder, and making something that is both cheap and tasty on top of that is nigh on impossible. I have a few "go to" dishes that I can lash together in no time and this is one of them.
You don't need to be some sort of uber talented chef to make it, and you can just lash the whole thing together in less than twenty minutes. Give this a whirl tonight, it's a whopper feed…
The ingredients are super easy to find and the good thing here is that you can freestyle it by adding your own twists with different veg, meat or herbs.
Lash on three different pots. One with boiling water to cook the noodles. One with a small amount of water to make the stock and lash on a griddle pan or frying pan for the chicken.
Lash a couple of chicken stock cubes into the water. If you're veggie, vegetable stock will do the trick. Bring it up to the boil.
Grab a couple of chillies. You want this to have a kick so I'd go with a couple, but if you prefer it milder then just go with the one.
Again to give it a nice kick, chop the chillies including the seeds and all.
Chop up the spring onions and do so at an angle to make them look all pretty and shit. Then grab the beansprouts out of the packet.
Quarter up the limes.
Chop your mangetout at an angle, which will just make them look like you're eating in an authentic Asian restaurants as opposed to your own kitchen. Your friends will be well impressed with your nifty chef skills!
That's all the chopping done, you'll be happy to know. Pick the coriander leaves and set that all to one side.
Grab out the chicken breasts and season the bastards up. I just throw a little salt and pepper onto them with some oil, and do it all in the packet to save on washing up.
Lash them onto a hot chargrill pan. You need to do fuck all at this stage, bar leaving them there for about 4 or 5 minutes.
When they look like this flip them over and do the exact same thing on the other side. See the little marks on the breasts that again will make you look like a pro chef.
At this stage it is time to assemble the whole thing. Grab the two deepest bowls you have in the house.
Throw a selection of the ingredients into the bottom of the bowl. The hot liquid is going to cook them so there is little to no work left!
Lash in the noodles to cook. You'll have to follow the instructions on the packet for the noodles which should say about 2-3 minutes.
When the chicken is cooked through whip it off the heat and slice the bastards up at an angle.
Strain off the noodles and while they are still piping hot throw them on top of the other stuff in the bowl.
Lash the nicely sliced chicken breast up on top of the noodles. Look how pretty it is starting to look!
Throw the beansprouts onto the chicken.
Now the key is having the liquid piping hot, remember the veg may be soft but you still want it all to wilt and gently cook so pour the piping hot liquid right over the top.
Your dish should look something like this - absolutely gorgeous. Full of colour, flavour and absolutely gorgeous!
Doesn't it look seriously tasty? It looks like something you'd get in an Asian restaurant in town and pay about 15 quid for, but instead you can cheat the system and make it all at home.
The flavours are light and balanced so you won't feel totally lethargic after eating it, and it will soon become one of the regular dishes you whip up in the evenings. Head out now, buy the couple of ingredients you need and throw it together. Absolutely delish.
