Ireland has come a long way from its meat and two veg days, with delicious and exotic foods readily available in most parts of the country.
There's still a few things that we haven't quite latched on to yet... And we're PRAYING that some genius restauranteur adds one or more of these dishes to their menu in 2018.
Here's the foods we're dreaming of already.
No no, not dumping soup. These bad boys are filled with soup that you slurp out before eating the dumpling itself.
Forget about ice-cream, we want heavenly scoops of raw cookie dough please.
A cut-out hole in the burger is filled with cheese - perfect for dipping your fries into.
These delish Eastern European cabbage rolls are stuffed with meats and herbs.
WHY has this not caught on here? A bagel smothered in blueberry cream cheese is a breakfast sent from the Gods.
They're basically pancakes stuffed with Pad Thai. YUM.
We have corn on the cob, but not like this. A whole other level.
'Cos everything tastes better in a waffle cone, okay?
This huge bread roll stuffed with eggs, bacon and cheese is the ultimate brunch dish.
It might feature on some more high end menus, but bone marrow needs to get on everyone's radar. You scoop the meaty, buttery insides out. Sounds sick, tastes incredible.
Here's hoping we get our greedy mitts on some of these in Ireland soon...
