Calum Falls of Aimsir took the winning spot at Sunday's award ceremony.

 

The Euro-Toques Young Chef of the Year competition 2022 started in May and guided the young chefs through a culinary journey that culminated with a final and gala dinner at the Intercontinental Hotel on Sunday night. There were seven finalists in the end from restaurants all over Ireland.

The seven shortlisted Euro-Toques Young Chef of the Year 2022 finalists, their restaurants and mentors were:

David Condon (The Shelbourne/ Andrew Sommefeldt)

Calum Falls (Aimsir/ Jordan Bailey)

Victor Franca (Nua Asador/ Ross Lewis)

Attila Galambos (Aniar / JP McMahon)

Leticia Miranda (Mae Restaurant / Grainne O’Keefe)

Shauna Murphy (Adare Manor / Killian Bowen)

Eoghan O'Flynn (Liss Ard Estate / Alex Petit)

But there could only be one winner, and that went to Chef Calum Falls of Aimsir Restaurant, County Kildare.

[caption id="attachment_107335" align="alignnone" width="1463"] Falls, who was mentored by Aimsir chef Jordan Bailey, won with a main course of caramelised lamb liver, puffed dulse cracker, heather, spiced lamb leg, brown butter butternut, ceps, nettles and a dessert of raspberries, buckwheat, rose, honey shortbread, impressing the judges with his flair, imagination and skill in execution.[/caption] [caption id="attachment_107334" align="alignnone" width="2048"] Image via Host and Company[/caption]   Secretary General of Euro-Toques Ireland, Manuela Spinelli said this of the awards and its winner:

"On behalf of all the Euro-Toques Ireland team, I would like to congratulate Calum Falls on winning Euro-Toques Young Chef of the Year 2022. The competition was very close but all the judges were really impressed with both of Calum's dishes and it is incredible to see such talent emerge at such a young age in our competition. This is such a rewarding competition to be part of, witnessing young talent developing in front of our eyes every year. It has been another year full of surprises and excitement, great flavours and some serious skill."
